This right here is a French opera cake. If you love coffee, then this is a great treat to have. It’s made with three layers of an almond sponge cake, soaked in espresso syrup (must!) and then layered with alternating sweetness of ganache and mocha buttercream. I skipped the chocolate glaze and went straight for piping a bit of mocha buttercream to hold my chocolate piece. Delicious and an elegant treat, don’t cha’ think? The French opera cake is incredibly moist and melts in your mouth – all in one bite.
Like the strawberry pound cake petits fours, you can cut the opera cakes into whatever shapes you’d like. I went with the similar style of a square because I’d like to save every bit and pieces of this mini cake. Also, it may or may not be easier this way. You can cut away the imperfections with the sides that don’t align. It definitely takes some work to assemble these classic desserts, but in my opinion? So worth it. OMG, just get in my mouth.
Something to keep in mind though? Make sure to have some strong and I mean strong coffee nearby. Like the coffee beans that requires grinding. It totally brings out the flavor.
